Spaghetti Carbonara

Here’s a recipe I got from a great little cookbook I bought, from the PAGE ONE series. It’s very easy to make, and completely delicious. Much better than a lot of carbonaras I’ve had outside, actually.

So here’s a picture of the book:


And here is the recipe. I made just a few minor modifications. Enjoy!

Spaghetti Carbonara

INGREDIENTS (serves 6):

  • 1 onion, chopped
  • 1/4 cup (60ml) extra-virgin olive oil
  • 1 1/3 cups (160g) diced bacon
  • 6 eggs
  • 1/3 cup (90ml) cream (the original recipe asks for double cream, but that’s not always easy to find, and very expensive and fattening, so I just used regular cream as I often do with cream pastas)
  • Salt
  • Ground pepper
  • 3/4 cup (90g) fresh grated Parmesan cheese (buy good Parmesan please – it makes a world of difference)
  • 500g spaghetti


    1. Cook spaghetti according to packet directions. Drain and set aside.

    2. In a medium saucepan, sauté onion in the oil over medium heat till lightly browned, 2-3 minutes.

    3. Add diced bacon and sauté until crisp, 5 minutes.


    4. In  a large bowl, beat egg yolks and cream. Season with salt and pepper, sprinkle grated Parmesan. (Actually I was too lazy to separate the yolks so I just used the eggs whole, with the whites. And it tasted fine, but it also made the sauce a little more voluminous and watery. So better to use just the yolks.)

    5. Add spaghetti to the onion and bacon. Return to high heat. Toss for a minute.

    6. Add egg mixture to the spaghetti and toss briefly so eggs cook lightly but are still creamy.

    7. Serve immediately.

      but….i don’t want to make it i just want to eat it 😀

      you know this is deb rightttttttt. deb does not cook. 😀 at least nothing beyond instant noodles. though i must say i make a pretty mean bowl of instant noodles.

      Yes Carbonara! Ah yes. HOw i love it.

      I have tried it twice with great success – it combined breakfast and lunch all in once and it became scrambled eggs with pasta – TWICE.

      I now detest carbonara recipes and i’m done with trying to cook it. I’ll order it in a restaurant. MUHAHAHAHAHA it’s a good thing i have to intention to know how to cook =)

      Ahaha… sorry to hear about the sad experience Non cooking gal! That means you stirred in the eggs for a little too long, or the heat on your cooker is much too powerful and you need to turn it down at the end before throwing in the egg =)
