Asparagus with Crab Mayonnaise Dressing

Ingredients (4 servings):

500g fresh green asparagus
150g white crab meat
1 tbsp white wine
1/2 cup/100ml (or 85g) mayonnaise
Salt and pepper


1. Prepare the asparagus by discarding the woody ends and side leaves, then boiling until just cooked (about 3-5 min depending on thickness). Careful not to overcook. Remove and place asaparagus in a bowl of iced water to cool.

2. Roughly flake the crabmeat into a medium sized bowl. Sprinkle with white wine and mix in the mayo, salt and pepper. If the dressing is too stiff add a little milk.

3. Drain the asparagus and pat dry. Cut into smaller lengths to fit your serving plates. If you have small unused pieces of asparagus, chop them finely and add to the sauce. Arrange the asparagus and four individual plates and pour crab mayo over.

Very easy and very good!
